What is Mace

The dried outer layer of the nutmeg seed, originating from the Maluku Islands, Indonesia. Known for its warm aroma and premium value.

Mace is the bright red, net-like aril that surrounds the seed of Myristica fragrans, the nutmeg fruit. After drying, this thin layer turns golden orange and produces a distinctive natural aromatic character. Mace and nutmeg come from the same fruit, but mace is the outer layer that protects the nutmeg seed inside.

Originating from the Banda Islands in Maluku, Indonesia’s historic spice center—mace has been valued for centuries and was once traded globally alongside nutmeg. Its appearance, aroma, and quality are influenced by the level of maturity and the natural characteristics of the fruit grown in Indonesia’s fertile spice-producing regions.
